Look for the routines and expectations this teacher has put into place to encourage deep thinking and a safe environment for his students. I really appreciated the "fishbowl" strategy. We often try hard to use the document camera, but simply gathering around one another and giving a group of students the focus would allow students to feel valued as they communicate their thinking.
